Knotwood honey is a fall blooming herbaceous perennial, related to Buckwheat. It is found in 39 of our 50 States. The edible young shoots taste similar to rhubard, and the blooms are an important nectar source for bees in August and September, when little else is blooming. Knotwood honey produced from this nectar source is dark reddish color, and is sometimes called bamboo honey, yet tastes like a milder version of Buckwheat honey. Wonderful in teas, on pancakes and waffles too!
